Food Safety Programs

Class 1 and some types of class 2 food businesses need a food safety program.

Class 1 food businesses – must develop their own food safety program.  The food safety program must be audited and approved by a Department of Health approved food safety auditor.  A list of approved food safety auditors can be found on the Department of Health website    

Class 2 food businesses – the following types of class 2 food business require a food safety program:

  • a Class 2 retail or food service business undertaking any of the 8 designated high-risk activities;
  • a manufacturer of low-risk food that makes an allergen-free claim.

Food Safety Supervisor

If you run a class 1, 2 or 3A food business, you must ensure that you have a Food Safety Supervisor.

A Food Safety Supervisor:

  • Knows how to recognise, prevent and lessen the hazards associated with food handling at your premises
  • Has met an appropriate food safety competency standard for your type of food premises through a Registered Training Organisation
  • Has the ability and authority to supervise other people handling food at your premises and ensure that food handling is done safely

Class 3 and 4 food premises do not need to have a Food Safety Supervisor. However, they must ensure that all staff working at the premises have skills and knowledge to safely handle food.
